Sarsa is named after the Ilonggo word for “sauce” — and that single word is both the concept and the promise. Founded by Chef JP Anglo, who grew up in Bacolod, Sarsa was built on the conviction that the flavors of Western Visayan cooking deserve the same serious attention that Filipino cuisine has been quietly demanding for years. The restaurant opened in Makati and has since become one of the most respected Filipino dining destinations in the country.
The Sarsa kitchen is anchored in techniques that Negrense home cooks have practiced for generations: live-fire grilling with marinades built on calamansi, lemongrass, and achuete; slow-braised soups that need hours to become what they are; fermented sauces and bagoong that do the seasoning work no shortcut can replicate. The Inasal is made the Bacolod way — pecho cut, chicken oil basted, served with sinangag that the oil finishes — and the Kansi uses batwan fruit, not tamarind, because that is how it is supposed to taste.
What sets Sarsa apart from other Filipino restaurants is that it does not try to be everything.
